Because his attitude towards Maria and the Doll is really gross. 

The Doll (in the dream, at least) is clearly a sentient and alive being with her own feelings and thoughts, and one of the first pieces of dialogue you get from the man is “You’re welcome to use whatever you find. …Even the doll, should it please you…“ which is clearly an innuendo. 

Aside from how fucked up it is that he would say that about a Living Being, he was so obsessed with Maria, his student, that he made a Doll of her. (Say what you will about what you think their relationship was like, there is an inherent power imbalance with teacher/student relationships that almost certainly will make them unhealthy, if not downright abusive.)

It doesn’t matter if he’s “trying to spare you” from the Dream and the Moon Presence, that one sacrifice doesn’t automatically absolve him of everything else he’s done (his slaughter of the Fishing Hamlet villagers and his treatment of the Doll and Maria, to name a few we know of in canon)

He’s a morally complex character, yes, but I think we have every right to hate him. I’ve seen far more people idolizing him and acting as though he’s Done No Wrong which is clearly not the case. A portrayal of him as pure good does about as much disservice to the nuance of his character as a portrayal of him as pure bad does.

But in my frank opinion, I don’t hate him because he’s a boss so he’s a “bad guy” as someone else in the replies of this suggested, as I’m capable of critical thinking and know that just because a character is a boss that you fight that does not necessarily mean they or their goals are evil. I hate him because I think he’s a bad person, and I personally don’t find any aspect of his character that admirable at all.

This isn’t to say that you can’t like him as a character, because of course you can, but I am saying that people who like Gehrman should be critical of him, and should consider why they like characters such as Gehrman, and shouldn’t delve into apologetics especially considering the blatant suggestive subtext of that one infamous line of dialogue.

Hes a lonely old man filled with regrets who lovingly crafted a representation of his in-all-but-blood daughter as she would have been if she'd never become a hunter, in a better world where she wasn't cursed to undeath by his folly. Seeing his misery one of the old ones gave the doll life to keep him company, but he was so terrified of it he locked himself away. When he talks of us being able to use the doll, its more out of a show of dismissal, trying to show to us and himself that the doll means nothing to him, even though his original sentiment remains. (This is beside the fact that gherman abhors everything to do with the old ones, so the doll is an abomination in his eyes much like any other beast or monstrosity he has cut down in his many years as a hunter, so berating a killer for his actions against a living breathing being is a shit argument to be frank) Gherman made a lot of mistakes, but the doll was not one of them, and even what happened with Maria wasn't all his fault. He was a hunter, and as her father figure he taught her the only thing he knew. There was no power imbalance or unhealthy relationship to speak of, all of that stems from the same assumption that he's a dirty old man, which has utterly no basis other than a single line of dialogue that could have various meanings. In a game so deep, which you all even point out is very deep, why are you taking this all at face value??? And for the love of talos NOT EVERY INTERRACTION BETWEEN A MAN AND WOMAN IS SEXUAL, i see enough of this statement with ship deniers to have thought it deeply ingrained in tumblrs hivemind but apparently not, gherman was like a father to maria, HE DID NOT WANT TO DICK HER
