Indulge in the ideal combination of rich chocolate cookies and a cool minty twist. These sandwich cookies are perfect for any occasion.
Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/4 teaspoon salt. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 cup mini chocolate chips. 1/2 cup powdered sugar. 1/2 teaspoon peppermint extract. Green food coloring optional.
Instructions: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, cocoa powder, salt, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the mini chocolate chips. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Using cookie cutters, cut out an even number of cookie shapes. You can use circles or other fun shapes. Place the cut-out cookies on the prepared baking sheet and bake for 8-10 minutes, or until the edges are set. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. In a small bowl, mix together the powdered sugar, peppermint extract, and a few drops of green food coloring if using. Spread a teaspoon of the peppermint filling onto the bottom of one cookie and sandwich it with another cookie. Repeat with the remaining cookies and filling.
