Dinner: Steamed Sweet Potato & Feta Salad Really simple to make, but tasty all the same. I find the bitterness of the feta and rocket balance nicely with the sweetness of the potato. I steamed the sweet potato for around 20 minutes. Drizzle with olive oil, balsamic vinegar and black pepper. :)
Lunch today: Sweet Spanish Omelette
For this Tortilla with a twist, I followed a basic recipe (you can find plenty online) but substituted regular potato for sweet potato.
Zesty prawn salad (serves 2)
garlic clove
1/2 chili
1/4 red onion
3 baby courgettes
juice of 1/3 lime
extra virgin olive oil
coriander (cilantro)
poppy seeds
ground black pepper & sea salt
lambs lettuce & cous cous to accompany
1. Finely chop garlic, chili, coriander, onion and courgettes and fry gently for a few minutes with the lime juice, olive oil and seasonings, until soft
2. add the prawns in and a little more lime juice, fry for a further 2 mins
3. serve with lettuce of your choice and cous cous (I used corn couscous). Scatter with poppy seeds for garnish. Perfect for a simple healthy lunch or can be served as an alternative starter to a traditional prawn (yawn) cocktail !
Strawberry & Lychee Smoothie
6 lychees peeled & stoned
approx 150ml coconut water
6 medium/large strawberries
slice of lime for extra zest/garnish
After not having lychees in years, I had a bit of a craving for them today. This is a sweet, but very refreshing drink! Suitable for vegans
I haven't posted for a good few weeks - been very busy. Here is one of my fave healthy lunches- Fresh mozzarella & tomato on bread thins with a side salad. I've noticed my entries have so far been quite samey, so I plan to do something a little more adventurous for my next few entries!

Creamy avocado & coconut sugar smoothie (vegan, serves 2)
300ml coconut-rice milk
1 medium avocado (approx 165g)
1 large banana (approx 113g)
4 heaped teaspoons of coconut sugar (and a sprinkle for a crunchy topping)
(optional: 2 tbsp of soy yoghurt) - for extra creaminess
