BIO.
born in aurora bay to two parents who relocated from mexico after the birth of his older sister.
grew up very close to his family, especially his paternal grandmother despite her living in another country.
spent as many summers as he could back in mexico (usually every other), always said that he would move back there as an adult but that plan never came to fruition.
developed a love for cooking from those long days in the kitchen observing his abuela cooking, and eventually settled on wanting to do something culinary when he finished high school.
managed two semesters of culinary school before deciding that wasn't for him.
worked as a line cook in different establishments throughout town and in various states when he tried his hand at seeking out a life elsewhere.
as always, whenever he left he found himself drawn right back, usually out of some sort of family obligation.
and because he found it a little lonely to be so disconnected from his past, though he's not as quick to admit that.
at twenty-seven he was burnt out with his own lifestyle and decided to re-evaluate his life.
after quitting his cooking job, he decided to take up working the bar at the four leaf pub as a temporary measure while he figured out his next direction.
ended up under the wing of the owner, murphy o'connor. he had always had some awareness of the man but it wasn't until he worked for him did he get to truly know him and he fast became a mentor of sorts for santiago.
during a backroom game of poker after closing with some of murphy's friends, santiago technically won the pub in a well played hand, resulting in a running joke that it was his establishment in the months that followed.
the domino effect of a running gag was evident when murphy summoned him to his office and announced his plans to close up shop and move on after his wife philomena was diagnosed with cancer.
while santiago couldn't argue with the shift in the man's priorities, he hated the idea of the place under new management.
that soon passed when murphy suggested that they put their heads together and figure out a way for santiago to become it's next owner because he knew he would preserve the essence of what made it a great spot to drink.
has been running the pub for six years now and loves every second of it.
