My very filling, very healthy FRUIT juice-pulp springrolls ! I took the leftover blueberry, strawberry, apple and mint juice pulp, laid it out on some rice paper after mixing it with a tablespoon of honey. Then I added some extra mint, a few whole blueberries and some raisin for a "crunch". Then I wrapped it all together and voilà ! I was AMAZED by how good it was ! I am so excited to make this again ! Perfect for a snack !

I boiled 1/2 yam (40min on the stove) with 1/2 slow cooked oats, 1 teaspoon cinnamon and a sprinkle of Trader Joe's coconut "chips"
I am a die hard oatmeal fan and lately I've been trying to watch my added sugar intake. Since oatmeal has little flavor, it is important to pair a serving with natural sweeteners. Today I choose a yam and loved the taste. It was like a cinnamon pumpkin pie and the coconut definitely added an amazing crunch !
If you're looking for low carbs, this breakfast probably isn't for you. I have no problem with carbs and as a long distance runner I need them ! Getting natural carbs from fruits and veggies is way different than from processed foods or white breads !

I have been searching high and low for the perfect bottle to send to my friend. He wanted our old pictures from Paris and I was neglecting sending him a flash drive. I saw a similar idea from a product sold in Japan ($45) and I thought I would try to make my own. I bought a flash drive (16gb) from Best Buy for $9 and took off the plastic shell it came in. With care of course. I found the small bottle with a kork top at Trader Joes (they seriously have everything I need) and carved a slit carefully with scissors until the flash drive fit perfectly.
I went to thrift stores, Goodwill stores, Party City, Joann's Fabrics, Beverly's, Michaels, and even went to a flea market ! I found no small bottles with a big enough opening for a cork that would be wide enough. I found this bottle for Saffron that fit perfectly.. at Trader Joes for $5. Win.
I hope he likes my modern twist on message in a bottle !

I made one of my favorite juices the other day; mint, apple and lots of carrot ! The carrots and apples are sooo sweet so I have only one glass per serving to avoid too much sugar. I saved the pulp but was not sure what I was going to make. I was at work( I work in a deli at a local "whole foods" type of store) and tried their new Carrot Raisin salad. There were only 4 ingredients, shredded carrot, sour cream, raisins and pineapple ! It was so good and simple I had to make it !
I used the carrot pulp from my juice (the mint was a great add-in) and subbed the sour cream for non-fat plain greek yogurt with pineapple and raisins. It was so good I had to give some to my friend to try :).
Finding recipes for juice pulp is easier than I thought !

With the leftover juice pulp from the mango strawberry and cucumber juice I decided to use it in my oatmeal the next morning. Juicing berries can be hard and not all the juice gets separated from the fiber. I had a fruit mush that was jam packed with sweetness and I wanted to use it. For my oatmeal I cooked 1/2 a cup of oatmeal on the stove with 2 tablespoons of blueberries, a teaspoon of nuts, my juice pulp as a sweetener and some mint for flavor !
I always had a hard time adding lots fo sugar like jello or honey to my oatmeal, now I am trying to incorporate more natural/healthier foods to get the flavor and the nutrients without going into a sugar coma. I loved how the oatmeal turned out !

Juice the Rainbow !!!! Today I had a mango that was about to go bad so I popped that in the juicer along with cucumber for water mass and some strawberries for flavor. I loved the colors !

Over the summer I received a juicer as a gift. I have been juicing weekly since and have created some awesome (and some really weird) juices. Just recently I decided to incorporate the juice pulp to my cooking because there is so much leftover and its such a waste of good produce !! On this blog I hope to share my healthy juicing and wacky juice pulp recipes as well as my goals to maintain a healthy lifestyle !
