Tonight’s dinner from my “#hackerkitchen”: Roast Chicken with Chile-Basil Vinaigrette, Charred Broccoli, and Potatoes. Chicken brined overnight, marinated for 9 hours, and came out moist, juicy, and very flavorful! Thanks to @YesItsKathleen for sharing & explaining the recipe! Roasting garlic for the Chili-Basil vinaigrette and marinade for the chicken! Laying out the potatoes, shallots, after coating with police oil, thyme, and rosemary herbs for roasting. Got tired of watching remaindered herbs die in my fridge. So I decided to try something different: growing them. An article suggested starting from small plants yields more success than just seeds.
