This healthy egg salad recipe is a lighter version of the classic. Greek yogurt adds creaminess without excess calories, while the fresh veggies and tangy Dijon mustard provide a burst of flavor.
Ingredients: 4 hard-boiled eggs, chopped. 1/4 cup Greek yogurt. 1/4 cup diced celery. 1/4 cup diced red bell pepper. 2 tablespoons chopped fresh parsley. 1 tablespoon Dijon mustard. 1 tablespoon lemon juice. 1/2 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: Put the diced celery, diced red bell pepper, diced hard-boiled eggs, and chopped fresh parsley in a bowl. Whisk the Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper together in a different bowl until everything is well mixed. Mix the yogurt and eggs together, then add the yogurt mixture and gently toss until everything is covered. Put it in the fridge for at least 30 minutes before you serve it.
