Strawberry Margarita Jello Shots
This summer I had the pleasure to go see a Jimmy Buffet concert at Alpine with some of my best friends. It was hot, crowded, and so much fun. To celebrate, I made the most delicious strawberry margarita jello shots, and I wanted to share the recipe! Seriously, you want to make these right now. Here’s what you’ll need…
First, cut off the tops of the strawberries and hollow them out to create a cup to hold the jello. I found it to be much easier using a grapefruit spoon with the sharp edges to get all the way to the bottom. Then cut the tip off the bottom so the strawberry will stand upright. Just be careful not to cut a hole in the bottom or the jello will spill out. Lightly dry of the strawberries and arrange them on a baking sheet.
Next, make the jello as directed on the box. Stir in the tequila and triple sec. Using a funnel, pour the mixture into the strawberry cups. Fill them up all the way to the top because the jello will shrink as it cools. The strawberries then need to cool for about four hours in the refrigerator.
To finish them off, roll the rims of the strawberries into sugar and top with a tiny lime wedge (I used key limes). Definitely use sugar, NOT salt, trust me. Even if you like a salt rim on margaritas, it doesn’t translate here. And the final result is so tasty! (Kids will love a non-alcoholic version).
