There is a hint of chocolate flavor in these date and nut energy bars with cocoa nibs. The nuts are crunchy, and the dates are naturally sweet. In addition to being tasty, they are also very good for you and will keep you going all day.
Ingredients: 1 cup dates, pitted and chopped. 1 cup mixed nuts almonds, cashews, walnuts. 1/2 cup cocoa nibs. 1/4 cup almond butter. 1/4 cup honey or maple syrup. 1/2 tsp vanilla extract. Pinch of salt.
Instructions: In a food processor, combine dates, mixed nuts, cocoa nibs, almond butter, honey or maple syrup, vanilla extract, and a pinch of salt. Pulse until the mixture is well combined and forms a sticky dough-like consistency. Line a square baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture into the prepared baking dish, pressing it down firmly and evenly. Place the dish in the refrigerator to chill for at least 1 hour. Once chilled, remove from the refrigerator and cut into bars or squares. Store the bars in an airtight container in the refrigerator for up to 1 week.
