Wow something I have been missing since transitioning 2 years ago... German Chocolate cupcakes. They are happening right now. I used sweetened condensed coconut milk for the base of my topping eyeballed the amount of vanilla extract, coconut flakes and chopped pecans. The mixture is awesome and can be eaten like candy.
