everyone!!! i may be generally full of sadness! but!!!
look at my mfucking LOAF OF BREAD
I am writing the version of the resippy i used today since I make tiny adjustments each time, so hold your horses it's comin!
Equipment and Time Considerations
You will need a pullman's loaf pan, which is a bread pan with a lid. the reason just tinfoiling a regular cake loaf pan doesn't work is because a pullman's is also considerably deeper and longer that a regular loaf pan, it can fit about a store-sized loaf of bread. which. which it's where the sizing actually comes from, historically.
This is a sourdough recipe so you have to remember to keep your starter well fed AND that the proofing takes considerably longer than anything with instant yeast.
I've modified a bunch of timings throughout the recipe. While your average sourdough boule takes an overnight final proof (making it a 2-day loaf) and your average pullman's loaf recipe takes about an afternoon, this will take about a day's (little under 12 hours give or take) worth of time.
Also note that it is currently around 19C/66F so I've been using my lightly heated oven to keep the dough at decent proofing temps (idk like 70 to 85ish degrees fahrenheit? whatever the equivalent of a sunny window day is). You'll need to figure out your equivalent
Ingredients
Levain -50ish g active, full hydration starter -35g whole wheat flour -35g AP or bread flour -70g/mL water, lukewarm
Remaining Ingredients (Not doing an autolyse for this one) -500g/mL water, lukewarm -35g sugar -550g AP or bread flour -200g whole wheat flour -15-20g salt -65g butter or margarine, plus some reserved
Method
Prepare the levain by mixing all ingredients together in a glass jar (i reuse an old jam jar), covering top with cling wrap, and leaving somewhere warm-ish for about 4 hours. You'll know it's ready when it's doubled in size and has just begun to fall
If you're using a stand mixer, pour your active levain into it. (any other large bowl will do if you're doing hand mixing). Add the sugar and the water to the levain, mixing together.
Let sit for 15-20 min. (I do this to encourage a bit of rapid growth in the yeast, it ups the culture's concentration and takes a bit of the acrid sour out of the flavour profile)
mix in remainder of the ingredients, flours, salt, butter/margarine. If you're using a stand mixer, have it go for about 5 min on the lowest setting. I run mine longer, but I'm using my roommate's old model so the lowest setting is slower. If kneading by hand I would say about 10 minutes or so, and since this is a wet dough, the slap and fold method is probably the way to go.
transfer back to the bowl and cover with plastic wrap, place in a proofer/warm area.
Now it's time for initial proofing and series of stretch and folds. Wait a half hour, then do a stretch and fold. Repeat this cycle three times so you're stretching and folding a total of 3 times. (30min>S&F>30min>S&F>30min>S&F>30min)
Take your pullman's loaf pan and butter/margarine the bottom and sides
heavily flour a surface of choice. Scrape the dough out and let the dough rest on the counter for about 20 minutes
using a floured bench scraper, burrito fold the dough into a loaf shape (roll in sides first, then roll the long way) and transfer to the buttered loaf pan.
Let that rest in the pan for 10 minutes, then preheat the oven on bake at about 375F. The loaf should be out in the open with no lid for at least 20 minutes, otherwise it'll be too wet for the bread lame to score. (You also have the option of fridging the entire pan with a rice flour coated dish towel to get the same drying effect, but idk what the timeline'd look like for that)
lightly sprinkle some more flour onto the top of the loaf and score bread to your liking.
bake with the lid on for 40 minutes, then slide the lid off, raise temp to 425F and swap to broil setting (we want the heat coming from up top now) for about 15 minutes
cool bread off on rack and enjoy!!!!!!!
AH FUCK I RECORDED A DETAIL WRONG
it's 550g in AP flour not 450, I just edited it. the total flour to water volume is supposed to be 750:500 since it's a 3:2 ratio
baked this at a friends' board game night, have received at least one proposal of sorts upon the first cut/first bites of said bread
these are the sort of credentials I wish I could put on my culinary resume
Dude. DUDE. HUMPTY DUMPTY JUST FELL. YOU NEED TO SEE THIS ALL THE KINGS MEN ARE THERE TRYING TO GET HIM BACK TOGETHER. THIS IS SO FUCKED DUDE. IM SO SCARED. HE'S DEAD
🖐️ stand aside. only the court necromancer can save him now. we must pray his body isn’t too broken…
WTF are the horses doing
i don't fucking know i tried my best but i think we made it worse with our big hooves
WHY WERE YOU INVOLVED AT ALL ??
i don't knowwww *kicks in frustration and hits humpty dumpty again* fuckkkkkkk
STOP
My partner wanted some arm warmers, so I've been hacking together this pattern for a couple weeks, and I think I finally nailed the size & material. This thing is ridiculously comfy.
I... missed Luke a lot more than I realized...
I mean.. Yes.. through the years we thought a lot about him and we have those random times we text a lot with each other and then for months not at all..
But after 4 years we finally saw each other again and .. Gosh, I can really state I missed it.
The first thing he did when I opened the door was putting his swords and axe down, open him arms and be like "Come herrrreee" and there was this tight wiggling hug of a slight lift and shake random squeezes and it lasted ... minutes.
Then we let him in, he took his sword stuff upstairs and.. well, I can say I was impressed. This man is strong (but not specific strong looking) Lord. My meows.
He placed his swords and axes on the floor and he was like "Go ahead, exerience them" and then Royalty was like 'Fucking finally' and we played around somewhat. with them.
Luke was standing there watching us and telling stories that .. honestly is one huge collaboration of putting Rémus adventures and Royalty' adventures and Lordy adventures in one.
At the end of the day he gave Royal one of the swords cause Royalty was DRAWN to a specific one (which... I entirely understand). and one of the stories Luke told about regarding that sword is exactly a great summary of what I meant in the previous paragraph. Royal asked what the hell he did with it to have burnmarks on the edges and some deep cavings that isn't just done by chopping. And Luke was like "Oh, I took the sword once with me to a party, we drank a lot and I took a random coat I saw cause I couldn't find my coat, by the way *points to coat* that's this coat. Might have exchanged.. or stolen it. Got it for 3 years now. But anyway at the end of the party, it was like 3am probably and I was drunk. Which is not unusual, but anyway, I had this sword with me, I don't know why. But like. I had to go home and I started to cycle home and I realized I could make huge sparks if I let it slide on the road cause drunk me thought that was cool. And so I cycled home drunk, with a weapon scratching onto the road. Fucking hell I had luck I didn't come across a police officer, I would have gone in jail for weeks and lost my sword, you see."
The worst is, it didn't even surprise us for an inch. Because he's crazy like that.
After the swords and axe inspection we ended up on the couch and there I received CUDDLES, and he was gentle. Gosh, I love gentle. I just leaned against him, cheekrolled his shoulder, later I was just playing with his hands and he was holding me and stroking me, and a few times we ended up playfighting Réms bit and licked him several times. But Luke was gentle with us. We literally said "Dude.. Why are you so careful" and he was like "I don't know my own strength, I could literally break your bones" and we were like "You can be less careful." and he refused! He stayed incredible careful.
After those little fight sessions the cuddling continued again, and there we sat, cuddling for hours.. Doing nothing. I just listened to his heartbeat which is impressively steady. it.. reminded me a bit of the old days with Dee.. I missed it to just rest my head against someone and gently stroke someone and receiving gentle strokes in return.
It is really impressive how safe things feel with Luke, that man could do anything with us and we could do anything with him. He's relaxed, weird as crazy but he is so pure and gentle while also insane on a level that it's genuinely questionable how he's even alive.
Gosh, I wish we lived closer than 2 hour drive apart. We love that man. He makes us relaxed. he even makes Royalty relaxed and that is almost impossible.
I love him, not romanically, but I love him in a sense of feeling safe/trusted/connected/loved/seen/appreciated/accepted/complete.
I missed him. Gosh, I meowingly missed him.
When he said he had to go home, I refused to let go of his arm. and he was like "I should get going, it's a long drive. I would have stayed (for the night) if I didn't had business tomorrow but unfortunately I got to go." and I refused to let go. I missed him.. So.. Much... all those years.. and then he lifted up our body with one arm (body weights 68kg). and just dragged us to his swords, then Royalty switched in again and he did let go and just went to inspect the swords again as Luke made himself ready to leave.
Royal was drawn to one specific sword (I... already rambled about that earlier). Luke was like:
"You really like that one. hm?"
and Royal was like "Tis my favourite."
and Luke was like "Keep it."
And Royal was like "..................." staring at Luke
"I mean it, keep it."
Royal shook his head "You're crazy. You can't give a sword."
And Luke was like "I don't particularly like this one." I got those others.
And Royal was like "You can't just give a sword, that thing is expensive"
and Luke was like "Your side made me a bracelet, which I fucking overdue came to pick up. It's an exchange. Keep the sword."
Royal stared at Luke "Are you fucking serious?"
Luke was nodding and grinning like "Keep it, hang it on the wall or something. But Keep. It."
And Royal was just flabbergasted, holding the sword and be like 'holy fucking shit. That man's insane to just give a sword.'
In the inner it isn't exactly strange to have someone give someone a sword, but this is the outside world. Swords aren't exactly ... common ... I think it is even illegal here to own them
Royal's still meowing flabbergasted about it. He's extremely happy too, because he just loves this sword, it looks a lot like the one he has in the inner and this sword isn't particularly sharp (Thank you Drunk-Luke for destroying it, among other stupid activities you did with it) but that is also what makes Royal love it. It got outlived, it got rough, it got real.
There is just one problem. How the meow are we going to explain to the parents we have this sword that's worth roughly 400 euro out of nowhere. (He's insane to just give it.)
Luke's insane. I missed him.
WE HAVE GOT TO START LOVING THE PROCESS MORE THAN THE PRODUCT AGAIN
TABLET WEAVING INTRODUCTION
When i started i was going off of diagrams from old websites, and struggled a good bit. I hope this post will help you get started! Feel free to ask questions!
This video shows the very basics (not in english, but quite clear). This video explains how to read patterns before you start doing it backwards, mirrored and upside down (which is what i did!).
Basic tools; the beauty of tablet weaving is that you need minimal supplies to get started.
Cotton yarn (I use 8/4)
Cards (thin cardboard and a hole punch will do)
A chair or door handle, to tie the threads to
A belt, to tie the threads to yourself
A shuttle (you can start with a pencil, old credit card, ruler, your fingers,... i use a bone folder)
Variables to understand before trying to use a pattern
S/Z card slant or threading
The direction the cards face
Forward or backward turns
ABCD or DCBA
This video (mentioned above as well) explains these variables and how to read different patterns you will find. There is no universal way to write a tablet weaving pattern, resulting in different patterns directly opposing one another (& lots of frustration on my end </3).
General tips from me, a novice
Start with a thin band
Start with a simple pattern, where the cards all turn forward for the whole band, like this one
Then move to a pattern that alternates forward and backward turns, this one is simple but very pretty
After that, try a pattern that has you divide the cards into groups, like a ramshorn or dublin dragons
Be sure to use contrasting colours (in hue and/or tone). A black and white filter can help you here
Get some bag clips to prevent tangles (ikea!)
Always turn the edge cards in the same direction. This gives a neater end result. The edges can be the outer two cards, or a group that forms a decorative trim
Personally, i like looping the thread around a door handle instead of tying it, which makes untwisting threads very easy
You can eventually omit the written ABCD on the cards, but it is a good crutch to lean on when learning
I use some scrap wood with bolts that i tie to my belt, making it a little easier to manage tension and move the woven band along as i go
Finding patterns
I use pinterest for the most part. Twisted threads has many patterns, with a built-in program, but the search function is not great.
I made you four pinterest boards; for the sake of simplicity, the patterns are all GTT which means tablets face RIGHT, S/Z refers to the THREADING direction, use ABCD, forward turns the tablets AWAY from yourself (forwards = D over A)
Level one: all forward turns
Level two: alternating forward and backward
Level three: groups of tablets that turn differently
Level four: a fuckton of tablets with complex patterns
This video made me understand double-face weaving, this one is shorter and easier to follow. Double-face is a fun technique but i would reccommend getting good at following a regular pattern first.
My main mistake when i was starting out:
Whether the slant is S or Z, the cards should all face the same way. For some reason, I made the S-cards all face right and the Z-cards left. Simple, repetitive patterns will turn out fine but anything slightly more complex will be distorted, and you will be frustrated:
Your first few projects will likely be messy! Don't be too discouraged. Here's a couple of my firsts:
I’m kinda surprised that nalbinding isn’t as popular as crochet and knitting tbh because it has an even lower barrier of entry tools wise and unlike crochet and knitting it makes fabric that you can cut.
I guess it’s because it’s slower or something.
Nalbinding aka needle binding is when you use yarn and a big sewing needle to make fabric btw
It also has a lot of different kinds of stitches you can do that make different densities of fabric.
Some people even make rugs.
I feel like part of it might be casual people are generally aware of the existence of crochet and knitting, even if they don’t know very much about either, but have never heard of nalbinding
Yeah I hadn’t heard of it until recently and I ordered a big bone needle for myself to try it out and that should be arriving soon.
I was surprised that I’d never heard of it though. It’s older than knitting and crocheting and even though it’s been done all over the world it’s super relevant to Nordic culture and my grandmother and I are both into keeping in touch with our roots a bit so I’m surprised I’ve never heard of it.
It seems like the sort of thing that would be popular even if not as popular as crocheting and knitting, considering the low barrier of entry.
You also don’t need a bunch of different sized needles for nalbinding or whatever. The size of the stitch is controlled either completely freehand or by pulling it against one of your fingers. Most people who have a lot of nalbinding needles seem to either have tried out wood, bone, and metal ones to see which kind they liked or they enjoy carving wood or bone and like making their own needles as an extra hobby.
It’s also a lot easier to freehand and adjust as you go than crochet or knitting and you mostly go by inches instead of rows and number of stitches so a large number of accessories like stitch markers or whatever isn’t really necessary.
Maybe the lack of accessories also makes it unpopular idk. People do like collecting things in their nests.
I've been wanting to do so, I cannot find anyone who can teach me, and any books I can find on it are Ass in the Visual Learning department. Otherwise I'd be making the hell outta some nalbinded fabric
I found this channel by a nice man who makes up close tutorials
I create videos on YouTube to learn people how to needlebind using two fingers and your thumb. Needlebinding helps people to relax, relieve
truly there are only so many words
in sleep he blogged to me
In dreams he hit reblog
some random guy writing his fanfiction in the basement or something like that idk i've never seen phantom of the opera
I won't lie i wanted to draw this particular costume for years
Au where Goncharov and Andrey survive everything, grow old together and sit on a street all day somewhere in the south of Europe
This is my favorite Goncharov post so far because:
1. The concept of an ALTERNATE UNIVERSE for a movie that DOESN'T EXIST is sending me into another dimension.
2. Despite appearing nonsensical, we of course are living in a world where the established Canon of Goncharov is that they do not survive everything and grow old together.
3. Of fucking course Tumblr would imagine a movie with two characters with intense homoerotic subtext, kill them violently with their love unfulfilled, and THEN create AU FAN ART WHERE THE LOVE IS FULFILLED.
And all of it fucking slaps I love this so much
I will never tire of Goncharov as sincere yet self-aware pantomime of fandom
