I've been making Arepas Con Pollo but instead of putting the chicken and cheese in the middle, I've been mixing it into the dough (one whole rotisserie chicken for those wondering). It's essentially because I needed to shorten the time it takes me to make Arepas. BUT, since I was doing a wrong, I decided to push it further. I tossed the chicken in some adobo, cumin, and garlic powder, mixed a diced and cooked until translucent onion, and a can of drained black beans in. Into the dough I mix two cups of mozzarella (normally it's 1 and 1/2 cups), and maybe a half cup of cheddar. Then once I'd gotten the dough and cheese mixed I added in the chicken mixture. They fried up beautifully and taste wonderful.

Also took some pork fat from some pork skin my husband smoked and tossed that in the pan for my oil. Highly recommend.
