Creamy avocado pasta! Yummy!

Spicy Ginger & Garlic Green Beans 1/2 lb fresh Green Beans 2 1/2 Tbsp White Wine Vinegar 1 Tbsp Extra Virgin Olive Oil 1 Tsp Fresh Ginger, minced 1 clove Garlic, minced 1/2 teaspoon Red Pepper Flakes Dry Roasted Peanuts, crushed (for garnish) Remove the dry vine-end of the green beens. Prepare an ice bath. Bring a medium-sized sauce pan of water to boil with a pinch or two of salt. Add in green beans and boil for about 2 minutes. Drain beans and put into ice bath to cool. In a bowl, whisk together rice wine vinegar, olive oil, garlic, ginger and red pepper flake. Allow to sit for about 10 minutes. Toss green beans in rice wine mixture. When ready to serve, top with crushed peanuts.

Spinach and Artichoke Pita Pizza, yum! Recently, I have become a huge fan of the pita pizza. I usually just top it with some sauce and cheese but lately I have been experimenting with different toppings such as sun dried tomato and basil, ham and pineapple and in this case, spinach and artichokes! These come together so easily and they give you the satisfaction of having a delicious pizza night with much less guilt. You will need 1 package of pitas (I always choose the whole grain kind) your favorite pasta sauce, blended Italian cheese, fresh spinach, about 1/2 tsp minced garlic and a 6oz jar of marinated artichokes. In a skillet over medium-low heat, heat about 2 tsps of evoo. Combine the garlic, artichokes and spinach and sauté 2-3 minutes until spinach is nicely wilted and artichokes are a nice golden color. Top your pita with sauce and cheese and load it up with the spinach and artichoke mixture. Heat in the oven at 350 degrees for 5-7 minutes, or until the cheese has melted and the edges of your pita are slightly browned. Pair with your favorite salad and enjoy this healthier alternative to frozen or delivery pizza! P.S. I always thought this would be a really fun recipe for the family! Everyone has their own pita and is free to load up on whatever toppings they please.
Holy Guacamole!
This is the perfect guacamole for any night of the week. Use it to complement your favorite taco recipe or simply eat it with chips and salsa.
All you need is one avocado, 1/2 lime, 1/2 tsp of minced garlic, a few splashes of lemon juice and salt & pepper. To make you simply cut the avocado in half and remove pitt. Scoop along edges of skin to remove avocado. Now if you are lucky enough to have a mortar and pestle the next step really will go much quicker. (My lovely boyfriend got me one for Christmas, but before then I would try and smash the avocado with a spoon or fork... I promise it's tougher than it sounds) Anyways, place the avocado in the mortar and pestle and combine with the juice of half a lime, the minced garlic and a few squirts of lemon juice. Season with salt and pepper as desired and enjoy!!
Who knew something so delicious could be this easy?! You may also want to add some diced onions or tomatoes depending on your mood. The variations of guacamole are endless.

Homemade Rice Krispies Treats
Homemade rice kirspie treats are the best! The smell of the marshmallows cooking down is almost unbearable. I almost forgot how delicious they were until my boyfriend and I made them a few weeks ago before the holidays. I brought about 20 of them for my co-workers and they were gone in less than 5 minutes!
Ingredients:
3 tablespoons butter
1 (10oz) package marshmallows - the minis worked great
6 cups Rice Krispies
To make:
In Large saucepan heat butter over low heat. Add marshmallows and stir until completely melted. Be patient it takes a few minutes.
Remove from heat. Add Rice krispies and continue stirring until well coated.
Using wax paper press mixture into 13 x 9 x 2 in pan coated with cooking spray. Let cool and then cut into delicious bite size squares!
Now you are ready to score some major brownie points with your co-workers like I did :)
