This Simple Chicken Enchilada Casserole is a quick and easy way to enjoy the flavors of enchiladas without all the hassle. It's perfect for a weeknight dinner and sure to be a family favorite!
Ingredients: 2 cups cooked shredded chicken. 1 can 10 oz red enchilada sauce. 1 can 4 oz diced green chilies. 1 cup shredded cheese. 6 corn tortillas. 1/2 cup diced onion. 1/2 cup diced bell pepper. 1 teaspoon chili powder. 1 teaspoon cumin. Salt and pepper to taste. Chopped cilantro for garnish.
Instructions: Turn on your oven and heat it up to 375F 190C. Put diced green chilies, diced onion, diced bell pepper, chili powder, cumin, salt, and pepper in a bowl. Add the shredded chicken and mix it all together. Put a thin layer of the chicken mixture in a baking dish. Add two corn tortillas on top. If needed, tear them to fit. Spread more of the chicken mixture on top, and then top that with shredded cheese. Add another layer of cheese, and finish with a layer of shredded cheese. Place the dish in the oven and bake for 20 minutes with the foil closed. Take off the foil and bake for another 10 minutes, or until the cheese melts and starts to bubble. Add chopped cilantro as a garnish before serving.
