I DID IT!
See. I've been a confectioner apprentice for a brief time in my life, and I was obsessed with nice-looking cakes for years before that (hence my stint in the business, but there's no making a life of this when the industry exploits its apprentices; what can you do). I had setbacks and successes with various doughs, batters, creams, icings... But the one thing I never dared to make was a sponge cake roll. I just wasn't sure about the structural integrity of a soft, thin sponge cake when rolling it tightly shut and open again and then shut again. I was sure it could only end in crumbles and tears.
Today, I filled this bad boy with banana and whipped cream, and I rolled it up, and I didn't break it into bits and pieces. It's delicious, and also my mom is helpful and patient; you may envy me.
