An egg white cooks at 60 degrees (Celsius), but an egg yolk cooks at about 67 degrees. So, if you want a perfectly cooked egg, with a completely un-runny white, and a rich, custardy yolk, you cook it at 63 degrees. At precisely that temperature the egg will cook perfectly for up to 45 minutes. The only cooking vessel capable of maintaining such a precise temperature, for such a period of time, is a device called an immersion circulator. The 63 degree egg is becoming a staple of modern gastronomy. Some might argue that it's a cop out - you can put a runny egg yolk on a dog turd and make it taste good.
