Here's the recipe: Ingredients: 1 cup cooked quinoa 1 cup cooked brown rice 1 cup cubed butternut squash 1 cup chopped kale 1 cup sliced mushrooms 1 cup diced sweet potato 1 cup diced apple 1/2 cup chopped pecans 1/4 cup maple syrup 1/4 cup olive oil 2 cloves minced garlic 1 tsp dried thyme Salt and pepper to taste Instructions: Preheat oven to 375°F. In a bowl, combine cooked quinoa and brown rice. Set aside. In a separate bowl, combine butternut squash, kale, mushrooms, sweet potato, apple, and pecans. In a small bowl, whisk together maple syrup, olive oil, garlic, thyme, salt, and pepper. Pour the maple syrup mixture over the vegetables and mix well. Layer the rice and quinoa mixture on the bottom of a large casserole dish. Spoon the vegetable mixture on top of the rice and quinoa. Cover with foil and bake for 45 minutes.
