These are some leftovers from meals earlier in the week: Wild Rice Quinoa and Red Lentil Mixture Black Beans/Kidney Beans • I always cook extra and leave it plain to continue to use for more meals. It’s meal prepping without commitment. • Yesterday, I decided to try an make some Leftovers Spring Rolls. • I took a half cup of each plus a half cup of frozen peas. Then added in all the all the spices pictured and microwaved for 1 minute. • I used the same Rice Paper I used for Fake Bacon (See Iron Throne Salad post) and rolled up for Spring Rolls. Now....this is not 100% cleanse perfect because I heated 2 TBS of coconut oil to crisp up the Spring Rolls. I cooked them very lightly and kept the heat low but 3 out of 4 fell apart. Probably due to overstuffing! In hindsight, I shouldn’t have cooked them at all.
