Ingredients: 2 large cucumbers, spiralized. 1 cup shredded carrots. 1/2 cup thinly sliced red cabbage. 1/4 cup chopped peanuts. 1/4 cup chopped fresh cilantro. 1/4 cup creamy peanut butter. 2 tablespoons soy sauce. 2 tablespoons maple syrup. 1 tablespoon rice vinegar. 1 clove garlic, minced. 1 teaspoon grated ginger. 1 tablespoon lime juice. 1/4 teaspoon red pepper flakes optional. Salt and pepper to taste.
Instructions: Spiralize the cucumbers and mix them with the shredded carrots, sliced red cabbage, chopped peanuts, and cilantro in a large bowl. It's best to use a separate small bowl to mix the peanut butter, soy sauce, maple syrup, rice vinegar, garlic, ginger, lime juice, and red pepper flakes. Whisk the ingredients together until they are smooth and well mixed. Add a little water to the dressing if it's too thick. Add the dressing to the salad and mix it all together until it's well covered. Add pepper and salt to taste. Serve right away or put in the fridge to eat later.
