Ingredients: 1 cup creamy peanut butter. 1/2 cup granulated sugar. 1/2 cup packed light brown sugar. 1/2 cup unsalted butter, softened. 1 teaspoon vanilla extract. 1 large egg. 1 1/2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup semisweet chocolate chips. 2 teaspoons vegetable shortening.
Instructions: The peanut butter, granulated sugar, brown sugar, and softened butter should all be mixed together well in a large bowl. Add the egg and vanilla extract to the mix and beat it until it's smooth. Mix the all-purpose flour, baking soda, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Put the cookie dough in the fridge for at least an hour, or until it is firm. Then, wrap it in plastic wrap. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Spread the chilled cookie dough out on a lightly floured surface until it's about 1/4 inch thick. Cut out cookies with a round cookie cutter and put them on the baking sheet that has been prepared. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Stir the chocolate chips and vegetable shortening together every 20 to 30 seconds while melting them in a bowl that can go in the microwave. Do this until the mixture is smooth and fully melted. Cover the bottom and about a third of each cookie with melted chocolate after the cookies have cooled. Put the cookies with chocolate on a baking sheet lined with parchment paper. Chill in the fridge for 15 to 20 minutes, or until the chocolate is set. The cookies are ready to eat once the chocolate has set.
