** Chef Larry Edwards is the author of the International bestselling cookbook "Edwardian Cooking: 80 Recipes Inspired by Downton Abbey's Elegant Meals" and the newly released "Style and Spice". In October, 2017, his tribute to American comfort foods will be released called "The American Table." You can follow the Chef on Twitter @ChefLarryEdward ** Have you been to the supermarket lately and seen the price of bread? What the hell is going on in the baking industry? Now if you really want to be frightened, look at the ingredients in that loaf of bread you just paid too much money for. Not good. We all love sandwiches and in most cases the only thing not nutritious about them in the bread. Time to change things and start making your own bread, especially Sandwich Bread. White bread, or Sandwich Bread, has been getting a bad rep lately. All the bad publicity you read about is in regard to the crap you buy at your local market and not the homemade variety. Supermarket white bread is also tasteless and boring. When you make your own Sandwich Bread, you actually have some flavor and real texture. It is also very easy to make at home and it freezes wonderfully well. By-the-way, you do not need to spend extra money for the so-called "bread flour." Everyday all-purpose flour works perfectly for Sandwich Bread.
This recipe for Sandwich Bread is actually the American classic version. Nothing fancy. No special ingredients or pans needed. It does take a little time since it is a yeast risen bread but during its rising times, you can go about doing whatever it is you had planned. I think once you try making your own Sandwich Bread, you will not go back to the store bought poison again. It will save you money and it will be better for your health.
SANDWICH BREAD (makes 2 loaves)
Ingredients needed to make Sandwich Bread: 2 cups warm water
1/4 cup sugar
2 1/2 tsp. dry yeast
5 1/2 cups all-purpose flour
1 Tbs. salt
1/4 cup melted butter
Steps: 1) In a medium bowl, whisk the water, sugar and yeast. Set the bowl aside 10 minutes for the yeast to proof (foam).
2) In a large bowl, whisk the flour and salt.
3) Into the flour stir the proofed yeast and melted butter to form a dough.
4) Place the dough on a floured surface and knead 10 minutes.
5) Place the dough back into the bowl, cover and let rise 1 hour in a warm area.
6) Remove the dough to a floured surface and knead 5 minutes.
7) Line the bottoms of 2 8x4 loaf pans with parchment paper.
8) Divide the dough in half and form each into a loaf which will fit into the prepared pans.
9) Place the dough into the pans and let rise 1 hour.
10) Pre-heat your oven to 375 degrees.1
1) Place the breads into the oven and bake 30 minutes.
12) Remove the breads from the oven and let cool in the pan 10 minutes.
13) Remove from the pans and let cool on a wire rack.

Happy Saint David’s Day 2015! - Discovering the New World
Happy Saint David’s Day 2015! – Discovering the New World
Today is St David’s Day, and the people of Wales are celebrating the life and times of their Patron Saint, St David. I was also interested to hear that all across America, “Welsh Americans” were celebrating this National event over the weekend. We are all familiar with “Irish Americans” and “Scottish Americans”, but I have to say that I had not really thought a great deal about how…

Day #15: American Chocolate and Almond Cookies
As you can probably tell I'm really getting into baking during Coma na Copa - I think it's because the raw ingredients are inexpensive and the results make me happy!
Researching for today's recipe involved the terrible job of trawling through (or rather drooling over) lots of great American baking blogs until I found Lovin in the Oven.
I am in total awe of the blog's creator Kim who somehow manages to be a great baker, blogger, designer, photographer and flight attendant all at one time.
The site is beautiful and well laid out with the recipes indexed by types of meal and more baking recipes than you could shake a wooden spoon at!
I adapted the recipe slightly, which I would recommend doing, you could use different varieties of chocolate and nuts. The recipe makes lots so you'll have lots to give away to friends or people you want to butter up (as I did with my slightly frosty doorman who's good to have on side!)
