Now if you really want to be frightened, look at the ingredients in that loaf of bread you just paid too much money for. Not good. We all love sandwiches and in most cases the only thing not nutritious about them in the bread. Time to change things and start making your own bread, especially Sandwich Bread. White bread, or Sandwich Bread, has been getting a bad rep lately. All the bad publicity you read about is in regard to the crap you buy at your local market and not the homemade variety. Supermarket white bread is also tasteless and boring. When you make your own Sandwich Bread, you actually have some flavor and real texture. It is also very easy to make at home and it freezes wonderfully well. By-the-way, you do not need to spend extra money for the so-called "bread flour." Everyday all-purpose flour works perfectly for Sandwich Bread.
This recipe for Sandwich Bread is actually the American classic version. Nothing fancy. No special ingredients or pans needed. It does take a little time since it is a yeast risen bread but during its rising times, you can go about doing whatever it is you had planned. I think once you try making your own Sandwich Bread, you will not go back to the store bought poison again. It will save you money and it will be better for your health.
SANDWICH BREAD (makes 2 loaves)
Ingredients needed to make Sandwich Bread: 2 cups warm water
1/4 cup sugar
2 1/2 tsp. dry yeast
5 1/2 cups all-purpose flour
1 Tbs. salt
1/4 cup melted butter
Steps: 1) In a medium bowl, whisk the water, sugar and yeast. Set the bowl aside 10 minutes for the yeast to proof (foam).
2) In a large bowl, whisk the flour and salt.
3) Into the flour stir the proofed yeast and melted butter to form a dough.
4) Place the dough on a floured surface and knead 10 minutes.
5) Place the dough back into the bowl, cover and let rise 1 hour in a warm area.
6) Remove the dough to a floured surface and knead 5 minutes.
7) Line the bottoms of 2 8x4 loaf pans with parchment paper.
8) Divide the dough in half and form each into a loaf which will fit into the prepared pans.
9) Place the dough into the pans and let rise 1 hour.
10) Pre-heat your oven to 375 degrees.1
1) Place the breads into the oven and bake 30 minutes.
12) Remove the breads from the oven and let cool in the pan 10 minutes.
13) Remove from the pans and let cool on a wire rack.

There may be a lot of truth in this as through the history of mankind, bread has played an important part in keeping many civilizations alive. When it comes to breads, we all have our favorites. It might be the bland and boring white bread. It might be the enticing varieties of Italian breads. It might be the quaintness of French Breads. When it comes to breads, however, the master of the domain is the long and lean Baguette! What separates the Baguette from other types of French Bread is really quite simple. It is the shape. Whereas a typical French bread is formed into a rather large loaf, the Baguette is long and narrow (and if over baked can be used as a weapon). The dough to make either French bread or a Baguette is essentially the same. The secret to a perfect taste and texture for a Baguette is in the rising periods (as well as the shape). To make Baguettes in the old world artisan way, does take some time -- most of this time for the various rising periods. The actual putting together of the Baguette is quite simple and only takes a few simple ingredients. If you happen to be a party person, it is a must to learn how to make a Baguette. Why? Because the best bruschetta's (small open-faced Italian appetizers) are made with a Baguette. If you happen to have a Baguette or two which have gone stale, they make the best breadcrumbs. If you fancy enjoying a nice little get together featuring wine and cheese, it is the Baguette you will always to have on the table. All it takes is five ingredients and a little time and you will begin enjoying the regality of the famed Baguette! BAGUETTES (make 2 or 3 long thin baguettes) Ingredients needed to make Baguettes: 1 1/2 tsp. yeast 3/4 cup warm water 1 Tbs. sugar 2 cups all-purpose flour 1 tsp. salt Steps: 1) In a large bowl, stir the yeast, warm water, sugar and 1 cup of flour. 2) Cover the bowl and let rise 1 hour. 3) Into the bowl, stir the remaining flour and salt to form a dough. 4) Place the dough onto a floured surface and knead 10 minutes. 5) Place the dough back into the bowl, cover and let rise 2 hours. 6) Place the dough onto a floured surface and divide into 2 or 3 portions (depending on how thin you want your Baguette). DO NOT knead the dough again. 7) Using your hands, form the dough into an 10x4 rectangle. 8) Using your hands, roll the dough into a long log (loaf) and pinch the ends. 9) Line a baking sheet with parchment paper. Place the Baguettes onto the prepared baking sheet and let rise 1 hour. 10) Pre-heat your oven to 450 degrees. 11) With a sharp knife (or bakers razor) make a shallow slash or two atop the Baguettes and dust with a little flour. 12) Place into the oven and bake 20-25 minutes (depending on the size of your Baguette) 13) Remove from the oven and cool the Baguettes on a wire rack.

If the adage "bread is the staff of life" is true, then you are about to stand tall, smile and smack your lips as we present one of our brand new breads. A Mediterranean influenced Olive Oil and Blue Cheese Bread. This is the perfect bread to serve with any dinner, make a true gourmet sandwich with or just to dip into some wonderful extra virgin olive oil and enjoy as a healthy snack.
The texture of this bread is simply incredible. You have a delicate soft crust and an interior which is soft and angelic. The reason for these two different textures is the use of olive oil in the dough. The flavor of the bread is purely exotic and the reason for this is the fact that crumbled blue cheese is actually kneaded into the bread. Simply put, every bite of this bread is a joy.
One thing you might notice about the flavor of this bread is that it is a little more salty than others. This is due to the natural flavors of the blue cheese enveloping the entirety of the dough. If you want, you can cut down on the amount of salt the recipe calls for you to use. This is a rather simple bread to make at home and since it is a yeast risen dough, it does have a small rising period of one hour.
It should be noted that when you are kneading the blue cheese into the dough, it can get a little messy. As the cheese blends with the dough, it warms up (naturally) and begins to melt a little. This is what you want, so do not fear that you have done something wrong.
OLIVE OIL & BLUE CHEESE BREAD (makes 8 rolls)
Ingredients needed to make Olive Oil & Blue Cheese Bread:
2 Tbs. yeast 1/4 cup warm water 1 Tbs. sugar 2 1/2 cups all-purpose flour 2 Tbs. cornstarch 2 tsp. salt 1/4 cup extra virgin olive oil 3/4 cup cold water 1/3 cup crumbled blue cheese
STEPS:
1) In a large bowl, whisk the yeast, warm water and sugar. Set the bowl aside 10 minutes for the yeast to proof (foam). 2) Into the bowl stir the flour, cornstarch, salt, olive oil and cold water to form a dough. 3) Place the dough onto a floured surface and knead 5 minutes. 4) Place the dough back into the bowl, cover and let rise 1 hour in a warm area. 5) Place the dough onto a floured surface and knead in the blue cheese. 6) Divide the dough into 8 portions and form each portion into a ball. 7) Pre-heat your oven to 400 degrees and line a baking sheet with parchment paper or a silicon sheet. 8) Place the rolls onto the prepared cooking sheet and let them rest 30 minutes. 9) Place into the oven and bake 20-25 minutes. 10) Remove from the oven and brush with some extra olive oil while they are hot. 11) Let the roll cool on a wire rack until ready to eat.
