Bibimbap — a Korean all-purpose meal for any time of day
This hearty egg salad collage is based on the famous BLT sandwich and has boiled eggs, crispy bacon, fresh tomatoes, lettuce, and basil. This is a great meal for any time of the day.
Ingredients: 4 large eggs. 4 slices of bacon. 1/2 cup mayonnaise. 1 tablespoon Dijon mustard. 1/4 cup diced tomatoes. 1/4 cup chopped lettuce. 2 tablespoons chopped fresh basil. Salt and pepper to taste. 4 slices of bread.
Instructions: To boil the eggs, put them in a saucepan and add enough water to cover them. Once the water starts to boil, lower the heat and let it cook for 9 to 12 minutes, depending on how thick you want the yolk to be. Take the eggs off the heat and put them in cold water to cool down. Cut the eggs into small pieces. Get the bacon ready. In a skillet, cook the bacon over medium-low heat until it gets crispy. Take it off and let it dry on paper towels. Break up the bacon. Put the chopped eggs, crumbled bacon, mayonnaise, Dijon mustard, diced tomatoes, chopped lettuce, and chopped fresh basil in a bowl. This is how you make egg salad. Add salt and pepper to taste and mix well. Put the collage together: Warm up the bread slices. Put one slice of bread on a serving plate and cover it with a lot of the egg salad. Add another slice of toast and keep going until you have a collage of bread and egg salad. Take a seat and enjoy: Serve the collage right away after cutting it into halves or quarters. An open-faced sandwich that tastes great with fresh vegetables, a perfectly cooked sunny-side-up egg, and black beans. It can be eaten at any time of the day and is healthy and filling.
Ingredients: 1 slice of whole-grain bread. 1/2 cup of canned black beans, drained and rinsed. 1 egg. 1/4 cup of diced tomatoes. 1/4 cup of diced red onion. 1/4 cup of diced bell peppers. 1/4 teaspoon of cumin powder. Salt and pepper to taste. 1 tablespoon of olive oil. 1 tablespoon of chopped fresh cilantro. 1/4 cup of shredded cheddar cheese.
Instructions: Heat olive oil in a skillet over medium heat. Add diced onion and bell peppers, saut until softened, about 3 minutes. Add black beans, cumin powder, salt, and pepper. Cook for an additional 2 minutes. Toast the whole-grain bread until it's golden brown. In the same skillet, cook the egg sunny-side-up or to your preference. Place the toasted bread on a plate, spread the bean mixture evenly on top. Carefully slide the cooked egg onto the bean mixture. Sprinkle diced tomatoes, shredded cheddar cheese, and fresh cilantro on top. Serve immediately.
