Regi's curry journal, entry #01

Documenting my journey to try all the different SwSh curry toppings.

Apple Curry

Ingredients:

1 onion (medium)

1 carrot (medium)

1 potato (large)

2 pc chicken thighs (boneless, skinless because I'm lazy)

1½ apples

Curry cubes (medium hot)

Cooked rice

Kewpie mayo (optional)

Basil (optional)

Pepper and Masala powder (to adjust spiciness of curry)

Notes:

- Apple was in the curry itself as well as the slices on top

- The apple in the curry sauce was grated and then added in after the curry cubes were added and nicely melted.

- I had to soak the grated apple pieces in salt water because I peeled and grated them a bit early and I didn't want them to turn brown.

Results:

- couldn't really taste the apple in the curry, maybe should've added more or used a bigger apple.

- the apples that I could taste (the ones on top of the curry) gave the curry a pleasant freshness, the sweetness of the apples played nice with the slightly spicy curry sauce.

Overall pretty good for a first try, would make again but with more apple next time.

The Infamous Apple Curry (Vegan)

ok. so since i have unable to get THIS

out of my head for the past two weeks, i ran to my local asian grocery, made a bowl of japanese curry, and added some (unsweetened) applesauce i just had on hand

and...

it’s actually not that bad

I’m so glad there are leftovers from last night! This is a fragrant and perfectly spicy curry rice, made from scratch! It’s flavored with apples in the style of Mawaru Penguindrum uwu my sinuses are thanking me so much right now
