Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14 ounces artichoke hearts, drained and quartered. 1 cup chicken broth. 1 tablespoon lemon juice. 1 teaspoon dried oregano. 1/2 cup grated Parmesan cheese.
Instructions: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside. In the same skillet, add chopped onion and minced garlic. Saut until softened, about 2 minutes. Add quartered artichoke hearts, chicken broth, lemon juice, and dried oregano to the skillet. Stir to combine. Return the chicken breasts to the skillet.
