This recipe has melted cheddar cheese on top of mashed potatoes, bacon, and apples. The mashed potatoes are creamy, the bacon is savory, and the apples are sweet.
Ingredients: 1.5 lbs potatoes, peeled and chopped. 4 slices bacon, chopped. 2 apples, peeled, cored, and diced. 1 cup shredded cheddar cheese. 1/2 cup milk. 2 tbsp butter. Salt and pepper to taste.
Instructions: Boil the potatoes in a pot of salted water until tender, about 15-20 minutes. In a skillet, cook the chopped bacon until crispy. Remove from skillet and set aside, leaving the bacon grease in the skillet. Add the diced apples to the skillet with the bacon grease and cook until softened, about 5 minutes. Remove from skillet and set aside. Drain the cooked potatoes and return them to the pot. Add the milk, butter, and shredded cheddar cheese to the pot with the potatoes. Mash the potatoes until smooth and creamy, adding more milk if needed. Stir in the cooked bacon and apples. Season with salt and pepper to taste. Serve hot, garnished with additional shredded cheddar cheese if desired.

The meatballs wrapped in bacon should be baked or grilled for 15 to 20 minutes, rotating them halfway through, or until the bacon is crisp and the meatballs are thoroughly cooked. Heat the verde sauce in a small saucepan over low heat while the meatballs are cooking. Present the pork meatballs wrapped in bacon along with warm verde sauce for dipping.
