Bae Approved Recipe: Lemon Cheesecake topped with lemon curd. Topped with a lemon linzer cookie.

This recipe was sent to me by a Reddit friend. I was eager to try it because I am a sugar addict. The recipe is originally from Amy In the Kitchen and it worked out beautifully. I really wish I had planned out the baking a bit better, though. Bringing the ingredients to room temperature took MUCH longer than I expected it to and as a result, I was awake way later than I should have been making this. No regrets- I absolutely WILL do it again. The lemon linzer cookie is originally from Knead Bake Cook and bae and I actually had them at the cookie table at our wedding. The crust on this cheesecake is NOT a traditional graham cracker crust; it is made from the linzer cookies.
