Went down to @baggioburger last night to try out Ninos burgers with @gingerpigltd 28 day dry aged beef. There’s no better way to try it than with a Double Classic Roberto. Garlic and balsamic chuck steak patty, mozzarella, crispy Parma ham, sun dried tomato relish, mayo, rocket, pickles. Adding the aged beef certainly makes the difference to Ninos burgers which are already full of flavour. It’s such a success, unlike Roberto Baggio’s World Cup 94 penalty miss 😉. Aged patties won’t be on the menu yet, there’s still work to be done. ‘Nduja Really Like It? From @baggioburger. ‘Nduja and beef patty, taleggio cheese, mayo, onion. That’s all this burger needs. It’s all about that spicy pork taste, which is emphasised by the onions. Babbo Natalie, the secret Christmas special from @baggioburger. 28 day dry aged garlic and balsamic beef patty, mozzarella, buttered Savoy cabbage, homemade pancetta, clementine & port jus, in a panettone bun. I really did save the best Christmas burger til last. No turkey, stuffing, or cranberry sauce in sight! Keeping the Italian roots flowing through this burger is the traditional Christmas panettone, but used as the bun, which brought a sweetness, only enhanced by the clementine and port jus, which also brought a slight saltiness as a balance. Here’s another @baggioburger from last week trying out @gingerpigltd aged beef. Topolino. Garlic & balsamic chuck steak patty,Mozzarella, Gorgonzola, Parmesan, and cherry jam. The mix of sweetness from the cherry jam and the blue cheese is insane. It’s such a good balance. It’s usually fig in this burger instead of cherry, but I think the latter works a lot better.
