Was in a cooking mood today.
Almonds, walnuts, cashews, and dates chopped up and mixed with oatmeal, water, and spices. Then microwave. And topped with brown sugar. This was crazy filling.
Since I have been eating so many wraps, tried to make my own flour tortillas. They did not turn out right. Thick and not flexible. But tasty. Yet, will try this again. Just different recipe.
For lunch prep, baked garbanzo beans with olive oil and herbs.
Bake fries for dinner. Cut up a potato, seasoned, and baked. Turned out super good. But long bake time. Plus side they didn't massively burn like the chips I made a few days ago.
Then made two of my freezer staples. Braised red cabbage and caramelized onions. Both are great to add to whatever I cook during the week.
Garlic Chilli Oven Baked Fries
Preheat oven to 425°F
Peel and cut carrots, about 1/3 inch thick (fry size)
Line baking sheet with tinfoil and lightly spray with canola oil
Arrange carrots on baking sheet and bake for about 10-15 minutes, flip carrots and bake an additional 10 minutes (may need more time depending on how you like the texture of your fries)
Serve with dipping sauce; e.g. greek yogurt/sriracha/lemon juice, spicy chipotle mayo, avocado aioli, cilantro, avocado and lime dipping sauce, etc. / here are some seasoning ideas
