After the donut a few days ago, there was half a pumpkin left over, so? I put it in the oven to gratinate. Oh my goodness, it's so incredibly delicious. Simple yet so tasty. Do you like pumpkin? The recipe is really simple, with a few ingredients... Let me list them for you...
Baked Stuffed Pumpkin
Small Violino pumpkin
200g of ricotta cheese
2 medium boiled potatoes, mashed
Salt, pepper, and rosemary
A splash of milk or fresh cream
1 tablespoon of grated Parmesan cheese
For finishing
Some honey
Some almonds
A few rosemary needles
Cubes of raw pumpkin
A drizzle of olive oil
Instructions
In a bowl, mix all the ingredients and adjust the consistency with a splash of cream, set aside.
Wash and dry the pumpkin, cut it in half, remove the seeds and fibers.
Stuff it with the ricotta and potato cream, sprinkle some rosemary needles, a drizzle of honey, some halved almonds, and cubes of raw pumpkin cut from one side of the pumpkin.
Place it in a baking dish with parchment paper and bake at 200 degrees Celsius for about 40 minutes or until it becomes tender.
Remove from the oven and serve it warm, it's truly delightful...
