1 package Trader Joe’s Soy Chorizo
1 package (12 count) Corn Tortillas
Preheat oven to 375 degrees
Remove soy chorizo from the casing and put into a bowl. Microwave for 30-45 seconds and stir.
Individually heat the tortillas in a dry (no oil) skillet over medium heat and cook them for about 20-30 seconds on each side (to soften).
Spoon a small amount (1-2 tablespoons) of soy chorizo down the middle of a warmed tortilla.
Roll the heated tortilla up tightly and place the taquito seam side down on a baking sheet lined with foil (repeat this process until all the tortillas are used).
Brush the tops of the taquitos with a small amount of olive oil, then sprinkle with salt.
Bake for 18-20 minutes or until the taquitos begin to brown and are crisp to the touch.
Serve with salsa, guacamole, or vegan sour cream for dipping! Enjoy!
