A hearty and flavorful salad featuring barbecue lentils served over creamy cheese grits. This dish combines smoky lentils with cheesy grits and fresh vegetable garnishes for a delightful and satisfying meal.
Ingredients: 1 cup lentils. 2 cups water. 1/2 cup barbecue sauce. 1 cup cheese grits. 1/2 cup shredded cheddar cheese. 1/4 cup diced green onions. 1/4 cup diced tomatoes. 1/4 cup diced bell peppers. 1/4 cup diced red onions. 1/4 cup chopped fresh cilantro. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Rinse the lentils well and then drain them. Put the lentils and 2 cups of water in a medium saucepan. Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the lentils are soft but not mushy. Get rid of any extra water. Make the cheese grits in a different saucepan by following the directions on the package. Add the shredded cheddar cheese and mix it in until it melts and the grits become creamy. Stay warm. Put olive oil in a pan and heat it over medium-low heat. Cut up the bell peppers, green onions, and red onions. They need to be sauted for a few minutes so they get soft. Put the cooked lentils in the pan with the vegetables that have been sauted. Add the barbecue sauce to the lentils and mix them well to cover them. Add another 5 to 7 minutes of cooking time to let the lentils soak up the barbecue sauce's flavors. Add pepper and salt to taste. Spread the cheese grits out on serving plates before putting the salad together. Cover with the BBQ lentil mix. Add diced tomatoes and fresh cilantro to the top of each plate.
