Spread the balsamic glaze on top of the arugula. Use the last few slices of bread to close the sandwiches. Cut each sandwich in half and serve.

Ingredients: 4 salmon fillets. 1/4 cup balsamic vinegar. 2 tablespoons honey. 2 cloves garlic, minced. 1 tablespoon olive oil. Salt and pepper, to taste. Fresh parsley, chopped, for garnish.

Instructions: Preheat your oven to 400F 200C and line a sheet pan with parchment paper or foil. In a small saucepan, combine balsamic vinegar, honey, minced garlic, olive oil, salt, and pepper. Bring to a simmer over medium heat, stirring occasionally, until slightly thickened, about 5-7 minutes. Remove from heat. Place salmon fillets on the prepared sheet pan and brush the glaze generously over each fillet, reserving some glaze for later. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Once cooked, remove from the oven and brush the remaining glaze over the salmon. Ingredients: 1 lb chicken tenders. 1/4 cup balsamic vinegar. 2 tablespoons olive oil. 1 tablespoon honey. Salt and pepper to taste. 6 cups mixed greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup crumbled feta cheese. 2 tablespoons chopped fresh basil. 2 tablespoons chopped fresh parsley.

Instructions: In a bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper. Marinate chicken tenders in the balsamic mixture for at least 30 minutes. Heat a grill or grill pan over medium-high heat. Grill the chicken tenders for 4-5 minutes per side or until cooked through and caramelized. Remove chicken from the grill and let it rest for a few minutes before slicing into strips. In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
