hmm, this banan has been in my mailbox for too long, i think it's time to make banan bread out of it so here's a recipe
1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs, beaten
3 (over)ripe bananas, mashed
2 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 Tbsp whole milk
1/2 tsp vanillal
1/2 cup chopped walnuts (optional)
Beat oil and sugar together. Add beaten eggs and mashed bananas. Beat together well. Add flour, baking soda, baking powder, and salt. Stir in milk, vanilla, and nuts. Beat well (by hand, using a mixer for this makes the batter too watery and loose).
Scrape batter into a greased 9x5 loaf pan and bake at 350F for 50-60 minutes or until a toothpick inserted in the center comes out mostly clean. Let cool for 10 minutes before removing to wire rack to cool completely before slicing.

Today I made some healthier cookies. 🍪🍪 They are so good and easy to make. Since last year I've been making alot of healthy cookies with oatmeals and bananas!! Recipe is below picture and recipe is not mine so link is below at the end too.
Ingredients:
70 g butter
50 g brown sugar
1 egg
100 g integral flour
teaspoon of baking powder
bag of bourbon vanilla sugar
200 g of smaller oat flakes
50-60 g milk or dark chocolate cut into pieces
50-60 g of hazelnuts, chopped (to pieces, not completely ground)
1 larger banana (optional)
Preparation:
Wet ingredients, egg and butter, mix with sugar until you get a foamy mixture.
Mix the dry ingredients well (flour, oatmeal, salt, baking powder, hazelnuts and chocolate) and stir into a foam mixture with wet ingredients.
You will get a very compact mixture, and the only thing that matters is that everything is well mixed, without visible dry parts.
Make balls from the resulting mixture and flatten them as they will inflate during baking and arrange them on baking paper.
Bake them in a preheated oven at 180 degrees for about 10 minutes (if you work less and thinner) up to 15 minutes, if they are larger.
After removing them from the oven they will be even soft, so let them cool. Only when they are completely chilled put them in a tin box in which they can stand for up to a week, of course, if you do not eat them by then.
