My first attempt at Beef Wellington (individual size) with fondant potatoes! Diced mushrooms, onions, spinach, garlic and thyme. Added s/p. Cooked til moisture gone. Removed to cool. Added garlic and herb spreadable cheese and mixed well. Set aside. Cut filet mignon into 6 smaller pieces. Seasoned well with s/p. Seared all sides. Brushed with horseradish sauce/yellow mustard spread. Set aside to cool. Cut potatoes into small thick pieces. Put in water and caro syrup and set aside. Removed water and boiled for 15 minutes. Removed. Put butter in pan with rosemary. Placed potatoes on to crisp both sides for fondant. Added brandy. Cut puff pastry into squares. Set aside. Place prosciutto down. Spread duxelles mix evenly. Placed steak on and rolled carefully. Set in fridge for about 5. Placed steak in venter of puff pastry. Topped with another piece and folded together. Cutting off extra pieces. Scored and covered in egg wash. Baked at 425 for about 20. Pulled outbid oven and let sit for 5. Topped potatoes and beef with chives for garnish. Sliced in half and served to @jonhoche! (Sorry you missed out P!) Deeeeelish! I was going to make a mushroom sauce but forgot. Didn't really need anything but I wanted something to dip into. So did a ghetto sauce on side of sour cream/Heinz 57/HP sauce/butter/s/p. Pretty tasty! LOADS of prep but fun to do.
