These vegan baked blackberry donuts are a tasty treat. They are full of juicy blackberries and have a soft crumb. Great for dessert or breakfast!
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1 cup almond milk. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1 cup fresh blackberries.
Instructions: Warm the oven up to 175F 350C. Prepare a donut pan by greasing it. Mix the flour, sugar, baking powder, baking soda, and salt in a big bowl. Put almond milk, melted coconut oil, and vanilla extract in a different bowl. Mix the wet and dry ingredients together until they are just barely mixed. Add the blackberries slowly. Put batter into a piping bag or use a spoon to fill each donut mold about three quarters of the way to the top. As soon as you touch a donut lightly, it should spring back. Bake for 12 to 15 minutes. Let it cool a bit before taking it out of the pan. For extra sweetness, you can either dust it with powdered sugar or glaze it with a simple blackberry glaze.
