Ingredients: 1/4 cup butter. 4 cloves garlic, minced. 1/4 cup all-purpose flour. 1 cup beer pale ale or lager. 2 cups shredded sharp cheddar cheese. 1 cup grated Parmesan cheese. 1/2 cup milk. 1/2 teaspoon dried oregano. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. Salt to taste.
Instructions: Melt the butter in a saucepan over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. To make a roux, stir in the flour and cook for one to two minutes. Slowly whisk in the beer until the mixture is smooth and thick. Turn down the heat and stir in the cheddar and Parmesan cheese until they melt and become smooth. Add the oregano, black pepper, paprika, salt, and milk, and mix them together. Stirring every now and then, cook for another 5 minutes or until heated all the way through and creamy. Put it in a bowl and serve it warm with vegetables, pretzels, or breadsticks.
