Beetroot Salad with Horseradish Cream (Vegan)
I bought the freshest, most gorgeous beets recently and used the bulbs for some recipes, but — what to do with the greens?
The greens were also crisp and perfect, as if they were just harvested.
However, Ed hates beet greens. I’ve cooked them any number of ways to no avail.
Truth to tell, beet greens are not my favorite either.
But I hate wasting food.
So I shredded the greens, shredded some cabbage, mixed them all together and made them into Cole Slaw.
PERFECT!
Not only did the beet greens add some flavor, they also provided a lovely color, which I usually get from parsley — but I didn’t have parsley, so it all worked out deliciously.

COLE SLAW WITH BEET GREENS
1/2 medium green cabbage, shredded
2 cups shredded red cabbage
1 bunch beet greens, shredded
2 medium carrots, grated
3/4 cup mayonnaise
5 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon sugar
Place the cabbages, beet greens and carrots in a large bowl and toss to distribute the ingredients evenly. In a bowl, whisk the mayonnaise, vinegar, mustard and sugar together and pour over the vegetables. Toss the ingredients and let rest for at least 15 minutes before serving.
Makes 8 servings
Give your ham a special treat - a piece of lettuce! Feeling like giving them an EXTRA special treat? How about a piece or two of “fancy salad mix” (you can usually buy bags called something like this at the grocery store, they often include things like raddichio, arugula, baby spinach, etc.)? The hamster may not be able to tell that it’s fancier, but you’ll feel proud of having spent extra money on your ham. (But not too big - too much “moist” food (any fresh fruits or vegetables) is unnatural for a hamster (their diet normally consists primarily of grain and seeds, with only occasional berries or leafy greens and even if they do find a fallen apple small enough that it can be carried back to the burrow such things are often dried to store for winter) and can cause diarrhea, which can be fatal for hamsters. I got some really fresh turnip greens from the farm and beet greens from my own garden, I planted theses late fall and I have tons of leafs but no beets, must be the wrong type of soil from what I have found out, so I have lots of greens to use.

Cauliflower Red Lentil Soup with Coconut and Curry
Vegetable Literacy, by Deborah Madison, a cookbook I recently checked out of our local library after seeing it displayed, inspired me to create this recipe.
I added greens and lentils to round it out, more of a meal-in-one soup.
The lentils add a boost of protein. Red lentils soften more than brown lentils, and blend into the soup as it cooks.
1/4 cup unrefined coconut oil or olive oil
1 pound cauliflower, chopped fine
1 bunch scallions (about 5), chopped
1 pound beet greens with stems, chopped fine
1 cup red lentils
2 tablespoons curry powder
1/2 teaspoon sea salt
Ground black pepper, to taste
13.5 ounce can or fresh, unsweetened, organic coconut milk
4 cups water
1 large lime, juice
Heat coconut oil in a large pot. Add cauliflower, scallions, and beet greens, stir and cook until soft, about 5 to 10 minutes. Add lentils, curry, salt, pepper, coconut milk, and water, stir until well blended. Cover pot and bring to a boil. Reduce heat and let simmer for 30 to 40 minutes.
Add lime juice after pot removed from heat, to avoid bitter taste, brightens flavors at the end of cooking.
Yield: about 10 cups
Beet greens stem and leaf finely chopped. You can substitute other greens like kale or Swiss chard.
Cauliflower, scallions, and beet greens cooked until tender and soft.
Ikarian Mixed Greens Longevity Pie
You can totally use beet greens to dress up a table or use as greenery with other flowers. Plus you can eat them when you're done! (Probably don't eat them if you used them with other flowers...)
