Ensemble Nist-Nah - Spilla
Black Truffle is thrilled to announce Spilla, the second album from Nantes-based Ensemble Nist-Nah, 48 minutes of music for Gamelan, drum kits, wood and metal percussion instruments, and plucked strings that will surely count as one of the most electrifying records you hear this year. Founded by the Australian drummer/percussionist Will Guthrie in 2019, continuing the explorations begun in solo form on Nist-Nah (Black Truffle, 2020), the ensemble (eight or nine core members with occasional guests) has been consistently active in the half-decade since: composing, rehearsing, recording and touring Europe (with a mass of equipment in tow) to great acclaim. Spilla tracks the continuing evolution of the project since the recording of their first album, Elders (Black Truffle, 2022). The two sides of this record document two different iterations of the group, and the members' compositional input has increased: each side contains one piece by a member other than Guthrie. It has become clearer than ever that Ensemble Nist-Nah is not an attempt at a European Gamelan ensemble but rather a hybrid percussion ensemble that uses instruments from a Javanese Gamelan alongside other percussion to perform original music informed by a variety of South East Asian music but also by everything from free jazz to contemporary hip-hop: while Nist-Nah and Elders both featured traditional Javanese pieces, on Spilla the only tune not generated by a member of the group is by Guthrie’s long-time musical hero and occasional collaborator Roscoe Mitchell. Beautifully recorded and mixed, Spilla arrives in a sleeve decorated with core member Charles Dubois’ drawings of cymbals and gongs. Against the backdrop of a wider musical landscape dominated by over-produced electronic slop and bland harmonic wallpaper, Ensemble Nist-Nah stands out as a reminder, vital and unpretentious, of the joys and possibilities of human beings playing instruments together.

Itacho Sushi (板长寿司) is currently holding a Premium Hokkaido Scallop Festival with up to 30 percent off their range of innovative scallop items. As a seafood lover, I can’t afford to miss this chance to savour the shellfishes. Heading to the branch at ION Orchard on a weekday morning to beat the peak lunch time crowd.
Flipping through the online menu via the tablet, I quickly zoomed in to the Scallop Sushi promotion page and started sending the items to the cart. Took a slightly longer time to decide which are the dishes I wanted as they all look equally delectable. In the meantime, scooped out a small spoonful of wasabi and poured soy sauce over it.
Didn’t have to wait for long before the first plate of sushi 🍣 was served. From the left are two each of Roasted Salmon Skin Soya Sauce (S$1++ each) and Roasted Salmon Skin Soya Sauce with Cod Fish Caviar Mayo (S$1.20++ each) sushi. The salmon sushi 🍣 were melt in the mouth soft and so yummy. If not because the restaurant limits each customer to just two pieces per type, I would have order it over and over again.
The three scallop sushi on the right side of the plate are Roasted Scallop Sushi (S$3.50++), Roasted Scallop with Black Truffle Sushi (S$3.90++) and Roasted Scallop with Cod Fish Caviar Sushi (S$3.70++). All three of the scallop items were so fresh and sweet tasting just like those I had in Hokkaido. The toppings on the two of the sushi 🍣 enhanced the overall flavours to raise it up a notch.
The next plate I ordered is the 3 Kinds Scallop Sushi Set (S$5.80++). The scallops are un-torched and came with different toppings of tobiko mayo (seasoned flying fish roe), black truffle (paste form) and lobster 🦞 salad with avocado. Again the raw scallops were just so yummy and the toppings complemented the whole package.
The last dish to be served is this Baked Scallop Spicy Salmon Mayo Egg with Rice (S$8.40++). A beautiful dish topped with six scallops, an egg and baked till golden brown. The creamy and spicy salmon 🐟 mayonnaise completely covered the white rice underneath. The oozing egg yolk 🍳 added a wholesome goodness to the rice dish. Even as I walked to the cashier to pay the bill, I am already planning on the next trip to try out the other dishes on the menu.

Alright, next mushroom sans is done! And it’s Classic.
This one was pretty fun to do! Even if doing the truffle pattern on the hoodie was a total pain. And since these guys are supposed to be skeleton shaped fungi and not just have outfits based on fungi, it was fun to play around with different “bone” colors, he just didn’t look right being a simple off-white.
Anyway, silly little truffle guy- for anyone who doesn’t know, truffles are round mushrooms that grow in the ground. So he spends a lot of time in the ground! Eepy little guy. Also I did the math based on Horror, and Classic would be 6.75 inches tall! So smol. Thanks to @errorsanspilled for suggesting this!
