Ingredients: 1 can 15 ounces black beans, drained and rinsed. 1 cup cooked quinoa. 1 cup corn kernels. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 2 tablespoons chopped fresh cilantro. 1 tablespoon lime juice. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. 4 gluten-free wraps. 1 avocado, sliced. 1/4 cup salsa optional. 1/4 cup vegan sour cream optional.
Instructions: Put black beans, quinoa, corn, tomatoes, red onion, cilantro, lime juice, cumin, chili powder, salt, and pepper in a large bowl. Combine well. Place the gluten-free wraps on a flat surface. Spread the black bean mixture out evenly among the wraps and put one in the middle of each one. On top of the black bean mix, put slices of avocado.
