For breakfast, these fluffy blackberry sour cream pancakes are a treat. The sour cream makes it rich and tangy, and the blackberries give it a burst of fruity goodness. Great for a slow breakfast or brunch on the weekend.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup sour cream. 1/2 cup milk. 1 large egg. 1 teaspoon vanilla extract. 1 cup fresh blackberries. Butter or oil for cooking.
Instructions: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the sour cream, milk, egg, and vanilla extract. Mix until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps in the batter. Gently fold in the fresh blackberries into the batter. Heat a non-stick skillet or griddle over medium-high heat and add a small amount of butter or oil to coat the surface. Pour 1/4 cup of the pancake batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, approximately 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown and cooked through. Remove the pancakes from the skillet and keep warm. Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed. Serve the fluffy blackberry sour cream pancakes warm, optionally topped with more fresh blackberries and maple syrup.
