Lentil Bobotie Jaffels (Vegan)
Inspired by our Food and Cooking channel last month:
As I'm sure we're all aware, we recently had a pretty cool monthly channel, Food and Cooking! In this, so many cool photos were shared, recipes, and more! We’ve decided to start posting some #foodie posts, and dish out s’more content for you all over here on tumblr!
To start us off, here’s a recipe shared by Patchi, for Bobotie (bo-bow-tea) :D
Ingredients:
- 1 fairly thick slice of crustless bread ( white or brown) - 375ml milk - 25ml oil - 10ml butter - 2 onions, sliced - 2 garlic cloves, crushed - 25ml curry powder - 10ml salt - 25ml chutney - 15ml smooth apricot jam - 15ml worchester sauce - 5ml turmeric - 25ml brown vinegar - 1kg raw mince - 100ml sultanas ( a not so sweet raisin ) - 3 eggs - pinch of salt and turmeric - bay leaves
Cooking Directions:
1: Soak the bread in milk. Heat the oil and butter in a large pan. Fry the onions and garlic together. 2: When the onions are soft add the curry powder, salt, chutney, jam, worchester sauce, turmeric and vinegar and mix it well. 3: Drain and mash the bread, but keep the milk. Add the bread to a pan with the sultanas and mince. 4: Cook on low heat and stir. When the meat loses its pink colour, remove from the stove. Add 1 beaten egg and mix well. Spoon the mix into a greased 28x16 cm baking dish and level it out. Beat the remaining eggs with the bread milk, and mix in the salt and turmeric. 5: Pour it over the meat mix and put a few bay leaves on top. Put the dish in a water filled pan ( to prevent it from drying out ) and bake, with no cover, @ 180 C for 1 hour or when set.
