A traditional boxty recipe, these Irish potato pancakes are are fried until delightfully crispy on the outside and soft on the inside.

use left over baked potato or even for a quickie, use instant mash potato; jazz them up for 'loaded' boxty using left overs such as ground meat, peas, grated carrots, diced onions or apples; if it gets too crumbly or wet, add egg(s) as a binder before plopping it on the griddle

✿ ボクスティ | Boxty ・じゃがいものパンケーキ。擦りおろしたじゃがいも（マッシュ・ポテトも入れることもある）、小麦粉、卵、ベーキングパウダー（重曹＝炭酸水素ナトリウム）、バターミルクで作る。いわゆるパンケーキとは違ってふわふわしていなくて、じゃがいもを使用しているためずっしりとしており、主食として食べられる。スープやシチューや、肉やチーズと一緒に食べる。北部や内陸部でよく食べられる家庭料理で、フライパンで焼くもの、オーブンで焼くもの、茹でてつくものがある。アイルランドの祝日・聖ブリジットの日(2月1日)の定番料理としても知られています。
