This microwave poached eggs recipe is a quick and convenient way to enjoy perfectly poached eggs without the hassle of boiling water. It's foolproof and ready in minutes!
Ingredients: 2 large eggs. 2 tablespoons water. Salt and pepper to taste. Non-stick cooking spray or butter optional.
Instructions: Put 2 tablespoons of water in a bowl that can go in the microwave. Make sure the eggs are well spaced out when you crack them into the bowl. Use a fork to carefully poke holes in the yolks so they don't explode while they're cooking. Add a little salt and pepper to the eggs to taste. A little butter or non-stick cooking spray can be used to lightly grease the surface of the water if you want to. Place a plate or plastic wrap that can go in the microwave on top of the bowl, making sure there is a small opening for steam to escape. Depending on the wattage of your microwave and how done you want your food, heat it on high for 60 to 90 seconds. Check after 60 seconds, and if necessary, keep microwaving for another 10 seconds at a time until the whites are set but the yolks are still a little runny. Use oven mitts or a towel to carefully take the bowl out of the microwave so you don't get burned. Carefully lift the poached eggs out of the bowl with a slotted spoon, letting any extra water drain back into the bowl. Put the eggs on a plate and serve them right away.
