Quick change of plans for tomorrow, actually. We have this roughly half a bag of Costco broccoli salad left, after he picked up some his last trip.
I had honestly forgotten it existed in the fridge, until I went to get those peppers out. They'll definitely keep longer than this will. My original thought was to use the rest for an easy stir fry.
But, new tentative plan: some noodle salad! Can cook a little chicken breast to slice up and have with it. Two good inspirations using a peanut dressing which should go over well here:

That second take actually calls for broccoli slaw. I would imagine that either take would work great using bagged coleslaw mix too.
So yeah, I may mix a dressing in advance and chop some peanuts. We both bought plain roasted salted peanuts recently without the other realizing, so there's more than plenty. (That's also sorta how I decided to go ahead and try those delicious Jimmy Carter cookies.)
That chicken should also go in the fridge tonight to thaw out.
The noodles can wait for tomorrow, and we can assemble bowls as we see fit. Not sure yet whether I'd prefer rice vermicelli, or the little wider noodles like for pho. We keep both.
