This Red Cabbage-Apple Slaw with Speck and Caraway Dressing is a delightful combination of sweet and savory flavors. The crispy speck and fragrant caraway seeds add a unique twist to the classic slaw, making it a perfect side dish for any occasion.
Ingredients: 1 small red cabbage, thinly sliced. 2 apples, thinly sliced. 200g speck or bacon, diced. 1 teaspoon caraway seeds. 1/4 cup apple cider vinegar. 2 tablespoons olive oil. 1 tablespoon honey. Salt and pepper to taste. Fresh parsley leaves for garnish.
Instructions: In a large bowl, combine the thinly sliced red cabbage and apples. In a skillet over medium heat, cook the diced speck or bacon until crispy. Remove from the skillet and set aside. In the same skillet, add caraway seeds and toast for about 2 minutes until fragrant. Whisk together apple cider vinegar, olive oil, honey, and toasted caraway seeds to make the dressing. Season with salt and pepper to taste. Pour the dressing over the red cabbage and apple mixture. Toss well to combine. Sprinkle the crispy speck or bacon over the slaw.
