Ingredients: 1 cup red lentils, rinsed and drained. 1 onion, finely chopped. 3 cloves garlic, minced. 1 bell pepper, diced. 1 can 15 oz diced tomatoes. 1 can 15 oz black beans, drained and rinsed. 6 cups vegetable broth. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 2 cups baby greens kale, spinach, or arugula. 1 lime, cut into wedges. Fresh cilantro, chopped, for garnish. Tortilla strips, for serving.
Instructions: In a large pot, saut the chopped onion and garlic until fragrant. Add the diced bell pepper and cook until softened. Stir in the red lentils, diced tomatoes, black beans, vegetable broth, cumin, chili powder, salt, and pepper. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender. Stir in the baby greens and cook until wilted. Adjust seasoning to taste. Serve the soup hot, garnished with fresh cilantro, a squeeze of lime, and tortilla strips on top.
