Egg-in-a-Hole Pizza Bagels
Chef’s Note: I enjoy the concept of this. Tastes more pizza than egg, but it still tastes fine. Bagels may be slightly soggy if they weren't completely toasted. I recommend eating with a fork and cutting each “pizza” into fourths

Makes: 4 servings
Ingredients
1 tbsp butter, softened or butter spread
2 bagels, halved
1/2 cup pizza sauce
1/2 cup shredded mozzarella
mini pepperoni
~1/3 cup water
4 large eggs
Instructions
1. Spread butter evenly on the cut part of the bagel halves.
2. Place the bagel halves in a pan butter side down. Toast until golden, a few minutes.

3. Turn off the heat and place the bagel halves on a plate, toasted sides up. Cut out/tear a hole in the center of a bagel about the size of an egg yolk
you can just eat the bagel scraps
4. Spread bagel with ~ 2 tbsp pizza sauce. Sprinkle with ~ 2 tbsp mozzarella. Add some mini pepperoni.
5. Add the bagels to the pan, pizza side up
If you can’t fit all of them, do this in batches
6. Add the 1/3 cup water to the pan. Turn on to medium heat.

7. Crack an egg in the center of each bagel hole.
if possible, try to have the egg white spill over the top and the yolk plugging up the center hole
8. Cover the pan with a large lid. Cook until the cheese has melted and the egg has reached desired doneness, about 5 to 7 minutes for a runny sunny-side up egg.

9. Serve immediately

Ingredients
1 loaf of demi-baguette
~1 to 2 tbsp butter spread
~2 tsp dijon mustard
~3 to 4 ounces deli sliced ham
1/2 avocado
Instructions
0. If needed, bake your demi-baguette
1. Cut the loaf in half horizontally.
2. Spread butter on the inside of both loaf halves.
3. Squeeze a thin line of dijon mustard on both loaf halves. Spread evenly on the loaves
4. Layer ham across the baguette, folding it to try to keep it the width of the bread
5. Cut the avocado half into thin slices
6. Place avocado slices atop the entire ham
there should be enough to make one layer along the entire sandwich
7. Place top atop avocado. Cut in half.
