A delicious and hearty quinoa dish with the savory flavor of sausage, the sweetness of pears, and the crunch of candied walnuts. Perfect for a quick and nutritious meal!
Ingredients: 1 cup quinoa, rinsed and drained. 2 cups chicken or vegetable broth. 1 tablespoon olive oil. 1/2 pound sausage, sliced. 2 pears, diced. 1/2 cup candied walnuts, chopped. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Bring the broth to a boil in a medium-sized saucepan. Turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is cooked and the liquid is absorbed. Put olive oil in a pan and heat it over medium-low heat. Put in the sausage slices and cook until they turn brown. Put in the diced pears and cook them until they start to turn a little caramelized. Adding cooked quinoa and candied walnuts is a good idea. Add pepper and salt to taste. Add fresh parsley on top and serve hot.
