BUON POMERIGGIO BELL'ANIME ❤️😘🥰 Stamattina sono stata svegliata dal rumore degli ingranaggi del mio cervello che avevano iniziato ad elaborare qualcosa. Volevo preparare qualcosa di buono e nuovo. Un primo che prevedeva l'utilizzo delle mani di sana pianta....impastare. L'azione più soddisfacente e distensiva che caratterizza la mia vita. Ho avuto un imput molto forte e sono andata a sbirciare tra i meravigliosi post di un profilo che parla pugliese quello di @lacortepaola99 . Dentro c'è tanta roba, non solo video e post ma storia, tradizione e amore. Ora..credo hai colpi di fulmine soprattutto dopo aver mangiato questo particolare tipo di pasta... gradita alla grandissima da tutta la famiglia. Here is a pasta about the quick, the summer and the dead (tuna).
It’s quick because it’s quick. It’s summer because it’s fish. And it’s dead because it’s dead good, and the fish was dead.
What’s nice about the idea of this being summery, is that if the weather turns cold (like now!) it’s a ragu and dark, so it’s actually quite comforting, but if the weather turns ok again, it’s fish and could be a perfectly acceptable summer supper.
This was a quick afternoon ragu, with no shopping involved, so it’s about as near to a free lunch as they come.
I salvaged: - the dregs of a bag of pasta (capunti) - a can of posh tuna - some oil I bought from another time (so that’s free now) - someone else’s tomato purée, withered garlic and onions
To make it, get a pan of water on the boil and a heavy frying pan on the heat. To make the ragu effect quickly you need to fry the onions and garlic a little fiercely (which I normally wouldn't recommend ). That creates the dark colour. There really isn't much else to it. The general idea here is that you are frying onions, garlic, tomato purée and large bits of tuna from a can in nice olive oil. It will take on colour. You add a glass of water, and that makes it saucy Cook the capunti, and when it is a bit al dente, start to add it with the drips of the pasta water to re frying pan. You can adjust to make it more saucy (more water) or more oily (less water). Both are nice. Chilli would be nice here, but I just added salt and black pepper. That sort of does it. Capunti is a sort of elongated orecchiette pasta from puglia in Southern Italy. This one was made with a funky flour made from barley or something like that. It's not exactly clear.
